London dry BIg Gin®
Nose: Bright, fresh citrus notes upfront, mixed with coriander, a little vanilla, and then a little menthol and black pepper. Taste: A good amount of spiciness cinnamon and cardamom that moves onto juniper and angelica. Then, like the nose, there is some bright citrus, before a dry finish with hints of pepper and menthol from the Grains of Paradise and Tasmania pepperberry.
The Bitter Admiral
1 1/2 oz Big Gin
3-4 oz fresh grapefruit juice
1/2 oz Rinomato or Aperol
Build over ice. Stir and serve w/ a fresh grapefruit wedge.
11⁄2 oz Big Gin
3⁄4 oz lemon juice
1⁄2 oz simple syrup
1/4 oz Clear Creek Distillery Pear Brandy
Shake & pour over ice.Serve with a float of Pear Brandy.
Garnish with lemon wheel.

Nose:Sappy pine, beeswax with a hint of marmalade, then a swirl of spice. Taste:A lovely interplay between the gin and the wood. There are elements of wood sap, beeswax and resinous juniper. This is followed by some more intense spiciness such as a complex green cardamom, which moves on to a more mellow spice with vanilla and a light cinnamon, as well as some hints of wood. This is a sterling example of good balance in the interaction of spirit and barrel.
The Royal Toddy
½ oz Bourbon Barreled Big Gin
½ oz Gifford Apricot Brandy
¼ oz JM Cane Syrup
¼ oz lemon juice
4 oz HOT AF water
Preheat cup for hot drink.
Build drink in tea cup and top with boiling water.
Garnish with clove studded lemon peel.

3⁄4 oz maraschino liqueur, like Luxardo
3⁄4 oz fresh lime juice
